Pot Roast


I was sick all weekend and didn't do much including much cooking.  Now I have some since of relief because I know that if I ever have to go out of town Honey and Bebé will not starve or eat junk food.  Honey took charge and made great dinners. Saturday he made pork chops over the indoor grill and Sunday he made a pot roast. The pot roast was so good and juicy. Here's his simple recipe:

POT ROAST
serves 4

2 lbs round beef roast
salt and pepper
½ cup Worcestershire sauce

Marinade meat in Worcestershire, generous amount of salt and pepper. 30 minutes
Set oven to 375°.
Sear meat in pan on all sides. Place meat into baking dish and in the oven for 1 hour or until internal meat temperature is at 160°.
Take out of oven and let rest for 10 to 15 minutes.

His accompaniments were sautéed green beans with onions and caramelized carrots. The green beans and onions were sautéed in the bits left over from searing the meat. The carrots were caramelized with honey. It was all so tasty.

(Don't mind the bib. Whatever fits and is clean goes.)
